Before the spectacular Harvey Hotels & restaurants with Harvey Girls existed, Santa Fe Railroad travelers got no food, water or bathrooms – only brief refueling stops to use primitive facilities & eat unsavory suspicious food. Then Fred Harvey recruited young women to be waitresses, who were taught manners & etiquette as well as food service.
